The other day I was craving chocolate pudding and bananas, so I whipped up this Chocolate Coconut Chia Pudding. It’s simple and quick, just takes half an hour to rest in the fridge to let it gel.
1 c. almond or rice milk
1/2 c. frozen bananas
1/2 scoop chocolate protein powder
1 T. maple syrup
1/4 c. chia seeds
1 T. shredded unsweetened coconut
Add everything except chia seeds and coconut to blender and blend until smooth. Pour into bowl and stir in chia seeds.
Refrigerate for about 30 minutes, sprinkle coconut on top, and enjoy!
