Hello again! I know I’ve been MIA from the blog lately, prepping for baby Judith’s arrival. But now my to-do list is dwindling (ok, so it really ebbs and flows between “a lot of stuff to do” and “MORE than a lot of stuff to do”, but at this exact moment it’s not too bad), so I’m taking time to relax and do things I enjoy (like blogging) while I can before sleepless nights become the norm!
The aroma alone of this granola makes it worth baking a batch. Your kitchen will smell glorious!
Orange Coconut Granola
4 c. oats
1 c. chopped nuts (I used almonds)
1/4 c. chia seeds
1/4 c. unsweetened coconut flakes
5-6 T. coconut oil, melted
1/2 c. maple syrup (I used 1/4 c. maple syrup and 1/4 c. honey, since we’re low on maple syrup)
2 drops Cinnamon essential oil (email me about the brand I use)
5 drops Wild Orange essential oil (email me about the brand I use)
1/4 t. ground cinnamon
1/4 t. salt
2/3 c. raisins (or other dried fruit)
Mix dry ingredients (except dried fruit), and mix wet ingredients in a separate bowl. Add wet to dry and stir to thoroughly combine.
Add dried fruit after baking. Breathe in deep when you take the granola out of the oven!
