Kale Banana Popsicles

Looking for a way to make vegetables fun? Beside the muted green color, no one would ever guess these Popsicles are loaded with kale!

They taste lightly like banana and citrus (the banana flavor wasn’t overpowering, which can sometimes happen with green smoothies).

Ingredients:

  • 1 frozen banana
  • 1 large handful kale
  • 1 small orange (clementine-size)
  • 3/4 c milk of choice (I used rice milk)
  • Drizzle of (local, raw) honey

Directions:

Add all ingredients to blender and blend until smooth. Pour into Popsicle molds and freeze.

I used our Zoku Popsicle maker (found on clearance at Williams Sonoma a while back!). I love it because the Popsicles are ready within 3-4 minutes, but you can only make 2-3 Popsicles before the Zoku gets too warm to make any more.

(Note the icy fingerprints 😉 )

Let me know if you try the Popsicles and what you think!
