Gluten-free Pear Crisp for 2

Ever walk out of Trader Joe’s with a big bag of pears that you and your husband can’t finish before they spoil? Yeah, I do too 😉 This crisp was an easy, quick treat for Sunday morning and helped us get our money’s worth out of those delicious pears.
  

Filling:

4 pears, diced
1/4 c sugar
3/4 t. cornstarch
3/4 t. cinnamon
1/2 t. vanilla extract
Topping:
1/4 c brown sugar
1/2 c. old fashioned oats
1/4 c. + 2 T. almond meal
1/4 t. cinnamon
2 T. cold butter, cubed
Preheat oven to 350 degrees Fahrenheit. Mix filling ingredients in a bowl. Pour into lightly greased loaf pan.
Mix topping ingredients, except butter, until all clumps of brown sugar are broken up. Add butter and use hands to mix it into the other ingredients. Continue until butter is well incorporated and texture resembles peas.
Place topping in even layer on top of filling and bake for 25 mins. Let rest 5-10 minutes before eating.
